The thief would still have access to those if the Ledger was using the same seed phrase as before. You need to send all your crypto to a temporary wallet (or exchange, etc), and then reset your Ledger to get a new seed phrase. Then add new accounts for that in Ledger Live, and send your crypto back to those new accounts. (then you can delete the old accounts that show up in Ledger Live, the ones connected to your old seed phrase)
