Do not write your PIN on your ledger or near it! Use preferably a 6 or 8 digit PIN that is hard to guess or looks random. Do not use 123456!

1. Yes, as noted by others. The device generates and holds the 24 words. so with the device and PIN they essentially have your 24 words.
2. There’s no difference between bluetooth connection and wired connection from a security standpoint. In both cases, nothing on the other end of the connection (phone or computer) can ever access your 24 words/seed phrase. Likewise, any attempt to get you to approve a transfer of assets would prompt a signature on your device that you can reject.
3. There’s no additional risk to wired connection, and due to how iOS is built right now, it’s proven tricky to implement firmware updates from iOS devices. I strongly recommend you use a computer to keep your firmware up-to-date. You don’t need to add accounts, just access the My Ledger tab. If your firmware gets too far out of date, you’ll experience diminished functionality and compatibility with Ledger Live and with Nano Apps.
