1) I don’t know what you were signing but, yes there is always a risk that you sign a smart contract that might drain your funds. However, I’m not sure if this warning is not referring to the risks of NFT staking. If someone gets in possession of your seed phrase they are able to drain your wallet without a Ledger device. Therefore, you need to make sure that your seed phrase stays offline and no one has access to it.
2) If you are using a Ledger device and make sure that your seed phrase stays offline, you are less exposed to this type of attack because you still need to sign with your Ledger device. What is possible, however, is that you connect your Ledger device with a fake website that looks like a trusted website which might prompt you to sign a malicious smart contract. If you have blind signing enabled you can sign a malicious smart contract without even knowing.
3) You can create as many addresses as you want in Ledger Live, the only condition is that you have performed a transaction on the address you have previously added. 4) Ledger Live actually just synchronizes will the blockchain explorers. Even if you have to download Ledger Live, you can just read your accounts.
