You could build a Trezor from parts you source yourself (open source hardware)
You could get the code now via the repository.
      Open source.

Hard to see how it goes closed. Someone would just fork and open source version, or rather the fork would be closed source

Would it truly matter as then you’d simply put the seed unto another wallet of choice supporting the bip39 protocol and continue from there.

As said before the actual wallet used does not matter at all pretty much as it is only used to approve sending anything somewhere else.

Trezor could make a new product closed source but Trezor cant change already existing Hardware.

I mean technically yes. The source is available on GitHub, Trezor could flip a switch and close the repository.

But for a company that has been open source from day one, the motivation is very low.

Yes, there is nothing that would prevent this or give advance warning if that was the direction that the company wanted to take. (They would basically just announce that X version of the firmware would be the last open source version)

That said, this would be a major change and require a complete re-write of heaps of existing open licensed code, so it’s more likely that a decision like this would happen with a future device early in it’s development cycle. (Though this can happen mid product cycle, just like with Coldcard when the moved away from an open source licence)

At the end of the day, it isn’t really productive to speculate about what a company or may not do in the future, you can only buy it for what it is today.

Short answer: No and even if you could just switch.
